Kale & Mushroom Pasta with Tofu Ricotta

 Ingredients:
1 box Whole Wheat Penne
lots of Kale
1/2 cup chopped Onion
1/2 package Mushrooms
1 package Tofu
1 cup chopped Parsley
2 cloves Garlic
Salt & Pepper to taste

Directions:
1. In a food processor, mix tofu, parsley and garlic to make tofu ricotta
2. Boil box of pasta
3. Saute kale, onions and mushroom
4. Mix it all together
5. Salt and pepper to taste
6. Eat your heart out!



Lazy tip: This has a lot of steps, but if you put the pasta to boil, put the veggies to saute, and then process the tofu... they can all be done at the same time to mix!

I really wanted to test out a pasta dish full of healthy stuff but no dairy. If you feel it needs it, add a little margarine to the pasta before mixing!
