Ingredients:
Tempeh
Rye Bread
Mozz cheese
sauerkraut
Special Sauce (Veganaise, Dijon, Lemon juice, hot sauce)
I also added avocado
Directions:
1. Slice tempeh in half and bake at 350 for 10 minutes
2. Toast rye bread
3. Melt mozz cheese on top
4. Add special sauce, sauerkraut & avocado
5. Add tempeh
6. Eat your heart out
Lazy tip: Microwave the tempeh
I have seen most vegetarian and vegan restaurant menus have a tempeh Reuben, so I wanted to try it out too! This was my first time with tempeh. It is sooo filling, I recommend slicing it to thin it out. This sandwich was a yummy quick dinner after work.
