1 Sweet Potato
1 cup uncooked Quinoa
1/2 cup beans of your choice (I used Kidney)
Chopped Scallion, 1 stalk
Onion, Lettuce, Cheese to top with
Bun or Bread of choice
1. Peel Sweet potato
2. Cut into chunks (evenly) or slice
3. Bake at 350 until soft
4. Rinse Quinoa - cook according to package
5. Mix together Quinoa, Sweet Potato, Beans and Scallions
6. Form patty
7. Fry in pan
8. Eat your heart out!
Lazy tip: Cutting the potato before baking will help it get soft faster.
Please note that this burger will fall apart, but it is so tasty it doesn't matter! I've eaten it for a few meals, it was sooo good!
I also added my special sauce... veganaise, Dijon, lemon juice and hot sauce!
